Meet our head barista Sean as he shares with you his journey to caring about the experience drinking a cup of coffee is meant to be.
When I first started in coffee, my head barista would monitor every shot I made. If I was slightly off with the timing, over, or under extracted, he would grab the shot, chuck it down the sink, and make me start again.
I felt disappointed in myself every time he poured my shot down the sink because I wasn't hitting the mark. Time and time again I thought I was just missing the procedure. I never considered coffee to be more than a procedure to follow.
Then that changed.
He sat me down one day and made me taste 3 different shots. 1 was over extracted, 1 under extracted, and the third one was the perfect shot. The first two i could taste the significant difference in flavour from that of the perfect shot; it was balanced and delicious.

The flavour hit my taste buds and it was like a party in my mouth. After that everything changed.
I had tasted the difference and I couldn't go back to caring so little about the quality and flavour. It was no longer about a procedure, it had become an experience, and so I became dedicated to creating the perfect cup of coffee for each customer to enjoy and experience.
So, now I see the coffee procedure in light of the experience I am creating for all of you. I have to do my job right to make sure every coffee is not just another cup of coffee, but a magnificent experience.
