Pull up a stool and spend ninety minutes that change the way you appreciate whisky.

The Callington Mill Masterclass Whisky Sessions are intimate, unhurried, and led by the people who actually make the spirit. Expect a relaxed conversation through what really defines single malt, the role of oak, natural colour, chill filtration, and why first-fill casks matter more than almost anything else in the glass.

You'll taste four signature Callington Mill expressions, served alongside a shared cheese board, and finish on our signature Whisky Macchiato.

Our June session is hosted by distiller Blair Whitehead.

Winter at Callington Mill Distillery, Hobart.

Bruny Island oysters with fingerlime pearls. Cape Grim oxtail. Wild Clover lamb glazed with miso and ssamjang. Spanner crab over a grilled corn arepa. House-made pasta with local mussels and Calabrian chili.

The new autumn menu is here, a culinary whisky experience celebrating the finest Tasmanian produce, served at our waterfront home inside MACq 01, Hobart.

Spiced pumpkin, goat cheese, pepita brittle. A cheesecake that tastes like the season itself.

A Valentine’s to Remember

Earlier this year, our Hobart waterfront whisky lounge was transformed into an intimate dining experience — refined, immersive, and distinctly Callington Mill.

Chef Louise Tanguay presented a seven-course degustation, showcasing the depth of Tasmanian produce with subtle global influence.

The menu unfolded as follows:
Sourdough — wasabi leaf butter, kombu, chives
Oyster — Bruny Island, finger lime, mignonette air
Tuna — Tasmanian wasabi, red onion cream, crispy nori
Mushroom — shiitake, black garlic, pickled grape
Bay Bug — tomato saffron velouté, mussel emulsion, kale
Duck — dry aged, cherry jus, tarte tatin
Striploin — Black Opal MBS7, oxtail lumpia, spiced carrot
Deux Cerises — Tasmanian cherry, morello cherry, Valrhona

Each guest was welcomed with a Callington Mill whisky or Poltergeist gin cocktail, alongside a curated selection of wine, sparkling, and beer.

Two hours of live instrumental music carried the evening — intimate, unhurried, and designed to linger.
