🇦🇺✨ BANH MI – A CRISPY LOVE STORY BORN FROM COURAGE, CREATIVITY AND VIETNAM’S SOUL
When the French colonised Vietnam in the 1800s, they brought with them the baguette – long, dense and chewy. It was luxurious, elegant… and foreign.
To the Vietnamese, it was intriguing, but unfamiliar.
They didn’t have butter or ham or expensive cold cuts.
But what they did have was creativity, resilience, and the genius of homegrown flavour.
So they sliced the baguette open.
They made it lighter, crispier.
They filled it with warm pâté, fragrant coriander, pickled carrots and daikon, chili, soy sauce – and slices of pork, roast chicken or tofu, depending on what they had that day.
👉 It was no longer a French baguette. It had become Banh Mi –
A humble street food. A handheld feast.
A bold reimagination of colonial influence, turned into a symbol of Vietnamese identity.

Many came to Australia with almost nothing – except the recipes, memories, and soul of home.
In their suitcases? A story.

They opened small bakeries and takeaway shops, often working 7 days a week. Slowly, Banh Mi became more than just a meal – it became a bridge between cultures, a flavour of resilience, a reminder of the beauty in fusion and survival.
