Good morning House of Gabriel insta followers. Here’s just a Quick Look at what’s going on this week and the rest of winter at House of Gabriel Tumbulgum.

Our garden is starting to spring back to life after its winter sleep, first Wisteria flowers came out last week, jasmine’s in full Blume, lemon trees all got new growth after winter pruning & first of spring roses starting to flower.

I’m starting to run some spring menu specials in readiness for the new spring menu.
- Greek roast chicken salad, mint , lemon, yogurt
- fresh light spring pasta dishes using the locally made pasta from pasta bah in Murwillumbah. Eg peas & spinach Creme with spring asparagus, garlic crumbs
- prawn & avocado bruschetta w pickled fennel
- strawberries macerated in slow berrie gin, pavlova, cream chantilly.

Don’t forget our Thursday night winter warmers menu will continue on until the end of month.

Wood fired pizzas every Friday night.

And lastly Joanne, myself & our staff will be taking a break for the first 3 weeks of September. We will take this time to go and support our daughter chef Abbey Kuhnell in her campaign to represent WorldSkills Australia in Lyon for cookery.
We will also use this time to refresh, re-educate, and be inspired in Lyon, the culinary capital of the world.
House of Gabriel will reopen on Wednesday 25th September.

We have some amazing news!

Abbey has placed 3rd in the global skills challenge in Melbourne last week. She was up against the best cookery competitors from Hong Kong, Chinese Taipei, Singapore and Brazil. With Chinese Taipei taking first place and Hong Kong coming second.

The global skills challenge was a great opportunity for Abbey to see what the other countries are doing and make connections with the other competitors as they will all be in Lyon later this year along with the 46 other competitors in cookery. Abbey has learnt so much and we are all so proud of the outstanding outcome she got and she is looking forward to getting straight into training for Lyon! 🇦🇺

Firstly we boil the rosella seeds in water, then discard the seeds and use rosella water as the base of our jam, using other fruits and the rosella petals to finish jam.

We have some exciting news!

Chef Abbey Kuhnell will be in our kitchen again on Sunday the 7th of April 2024 cooking a 4 course lunch for you to enjoy.
Abbey has just been announced an official Worldskills team Australia “Skillaroo” after showing her dedication and commitment throughout her training in the last 4 months.
The lunch will showcase local products from the tweed valley and each course will have an alcoholic beverage pairing.

On arrival Joseph Chromy sparkling, white peach purée

Country style sourdough w truffle butter

Crispy zucchini flowers filled with Australian bay lobster, smoked bacon jam.
Robert Oatley Chardonnay, Margaret River

Beef short rib, ricotta gnocchi, peas, our garden horseradish cream, red wine jus.

On Saturday 2nd March, we are bringing you 60/70 music trivia night with the theme being "Taking about your generation"! 🎶

You know it's going to be a fun filled night when Tumbulgum legend Dave Kidd is the host! You will be welcomed with a Husk Gin Cocktail + fresh baked sourdough with truffle butter on arrival followed by a delish 2 course meal (main & dessert) 🍸

✨️ History about House Of Gabriel's scone recipe by Chef Lee! ✨️

"This recipe has been handed down from my great grandmother nanna Hines, down to nanna Marg Brims, down to my mum Shirley Kuhnell and finally down to me when we took over House of Gabriel back in February, 2015. After a long discussion with mum and myself and in researching some information about this recipe we have come to the conclusion that the following reasons affordability, adaptability, practicality could be some explanation why this scone recipe has always been popular with our family.

Affordability could be linked to the stable ingredients in this recipe. Also, milk & cream would have been readily available as there were many dairy farms in the Tweed Valley in yesteryear.

Adaptability would have been contributed to seasonally abundant produce like pumpkins. This recipe can be amended to include other ingredients making either sweet or savoury scones. Practicality would be linked to readily available ingredients, this recipe is reasonably quick to make and easily served and stored." 😃

✨️ Our recipe & don't forget to save this post for when you need it! ✨️

Ingredients 👇🏽
3 cups sr flour sifted
1/2 cup icing sugar sifted
1 pinch salt
1/2 cup milk
1/2 cup cream

Method 👇🏽
Mix all dry ingredients with bread & butter knife, slowly mix in wet ingredients, you may need little extra milk, enough to bring all ingredients together into nice moist dough.
Place dough onto lightly floured surface , roll out to about 2cm thick, using desired ring cutter cut scones out and place on lined baking tray. Bake in oven 180 degrees c for approx 25 min. Rest few minutes before eating with lashings jam, butter, whipped cream .

*Tip 👉🏽 Don't  over mix the dough, just enough to bring all ingredients together. If you over mix, you will overwork the gluten in flour, resulting in dry crumble scones.
