A few things shape every vintage. Picking time, fruit temperature, and how gently the grapes are handled from vine to press.

We start in the dark for a reason, the cooler the fruit comes in, the more flavour we keep, and the cleaner the juice runs. From there, slow pressing and patient fermentation let the season's character come through without being pushed.

Each year tells a slightly different story, and that's part of what we love about it.

A bowl built for cooler days. Tonkotsu broth, roasted pork belly, soft-boiled egg, seaweed, spring onion, and noodles that bring it all together. Easily one of our favourites.

Pair with a lightly oaked Chardonnay to sit beautifully alongside the tonkotsu, or reach for a lighter Pinot Noir if you'd rather a red.

Crunchy tempura, soft fritters, crisp cucumber and carrot, pulled together with teriyaki and sesame. The Yasai is our kitchen's plant-based take, and it's been pouring well with the 2024 Chenin Blanc.

Ten years in Margaret River and we're marking it the only way that feels right. With food, wine and good company.

Join us this winter with Cabin Fever, a one-night-only dinner inside our Japanese-inspired restaurant on the winery. A seasonal three-course menu, two entrées and a main, each paired with Sorgiovanni Family Wines chosen for the cooler months. A glass of sparkling on arrival, a collaborative dessert from one of our long-standing suppliers, and winemaker Stuart Pierce hosting the room.

Friday 17 July, 6pm to 9pm, with exclusive Wine Club offers on the night.
