Some dishes don’t just feed you, they transport you somewhere else.
For Flavours of Rome, Chef Francesca is bringing the comfort foods of her hometown to the table. These are the kinds of dishes Romans grow up eating in neighbourhood trattorie and their home kitchens.
We’ll begin with crispy supplì, the beloved Roman street food with melted mozzarella stretching from the centre.
Then come layers of eggplant parmigiana, rich tomato, and bubbling cheese, followed by gratin vegetables with rustic sausage braised in white wine.
And of course, no Italian evening ends without something sweet: creamy pistachio gelato to finish.
I’ll be pairing each course with wines chosen to bring these flavours to life.
