It’s been a cold winter, sitting here “down by the river”… ❄️

I’ve watched the snow fall, the ice come and go, and so many beautiful people walk past. But now… It’s almost time. To be honest, I’m a little nervous...

You know that feeling… like the first day of school, or starting a new job. But I can’t wait to meet every single one of you ❤️

What if I mess up? What if you don’t like me?
But deep down… I know I’m built strong and ready.

So goodbye, winter, you’ve been good to me. But it’s time. Summer… I’m ready to play. People of PEI and beyond, I’m full of equipment and delicious Italian recipes. I can’t wait to see you, have some company, and be surrounded by laughter and smiling faces. Come meet me at Peakes Quay Marina Cove.

See you soon, Michelangelo’s 💛

🍕 Flavor doesn’t happen by accident. It’s engineered and it takes time ⌛

This video breaks down three different dough fermentation methods and why they matter so much for the final taste, texture, and digestibility of the dough.

Longer, controlled fermentation =
✔️ deeper flavor
✔️ better structure
✔️ lighter, airier bite

This is the kind of behind-the-scenes detail we obsess over so every slice tastes intentional, not rushed. Good dough takes time and your taste buds can tell 😌

Häagen-Dazs was not built on a secret recipe. It was built on perception. 🤓

In 1960, Reuben Mattus, a Polish immigrant living in the Bronx, started selling ice cream with a name that meant nothing. “Häagen-Dazs” was completely fabricated. It was designed to sound European, refined, and old-world, despite having no linguistic roots at all.

That choice mattered more than the ingredients. At the time, ice cream was a commodity. Cheap. Interchangeable. Competing on volume and discounts. Margins were thin because consumers saw little difference between brands.

Mattus changed the frame. By giving the product a foreign-sounding name and positioning it as premium, Häagen-Dazs
escaped commodity pricing. The company charged more per pint, reduced reliance on scale, and trained consumers to associate the brand with quality and indulgence rather than calories and price.

The product did not radically change.
The valuation did. This is pricing power in its purest form. When a product is perceived as special, demand becomes less elastic. Customers stop comparing prices and start comparing identities. That shift allows higher margins, stronger loyalty, and long-term brand equity that competitors struggle to replicate.

Over time, Häagen-Dazs grew from a small family operation into a globally recognized brand generating billions in revenue across decades. The value was not just in ice cream sales. It was in the name. From a wealth perspective, this is the core lesson.

Commodities fight on cost. Brands dictate terms. Mattus did not invent ice cream. He invented distance between his product and everyone else’s. That distance became margin.

Many businesses believe they need better products to grow. Often, they need clearer
positioning. If the market treats your product as ordinary, returns will follow.
