From one side to the other. The topic for this week is fun, about tipping.

If you visited my shop before, you might have noticed that I don’t have a tipping option for the machine. You simply pay for what you get.

That doesn’t mean I refuse tips, though. I still keep a small tips jar. If you enjoy your coffee, have a nice chat with me, and happen to have some change in your pocket, you’re welcome to drop some in. I genuinely appreciate it.

The reason I do things this way goes back to my own experience as a customer. Whenever I bought something, whether dining in or taking it to go, I often felt like I was being watched while paying. Should I tip? If so, how much? Even a simple purchase could turn into a little moment of pressure.

Now that I’m both the owner and the person behind the counter, I don’t want my customers to feel that way.

I also believe that a tip only truly becomes a gesture of appreciation when people are free to decide whether to give, when to give, and how much to give. To me, that’s what tipping should really mean. And for tips like that, I’m happy to receive it, and the person giving it feels good about it, too.

Perhaps this is a little idealistic when it comes to running a business. But to me, doing business, especially running a coffee shop, would be hard to keep going without a little idealism.

So next time if you feel like showing your appreciation but don’t have any change, please don’t feel any pressure. Simply telling me that you enjoyed your coffee is already a pretty good tip in my book.

Recently I have been enjoying this washed Typica from Ecuador roasted by Sorellina Coffee , I am a big fan of Typica variety and Ecuador is a region that I don't usually get coffee from, which makes this coffee more interesting (for me).

This coffee is actually a mild, daily drinker. It tastes red apple's sweetness in hot, and little sweet orange's citrus while it cools down a bit. Finished with some herbal aftertastes. The overall feeling is light and elegant, after having some funky co-ferment coffees, this one is just right to change mood.

Brew a cup of coffee, play my favourite music and look at the warm yellow light. I can do this all day.

Have been enjoying this washed & cherry co-ferment blend roasted by Colorfull , even though they stated it dark roast (not that dark in my opinion), it is still pretty fruity. The contrast makes this coffee fun to try.

It tastes like cherry Coca Cola in hot, with some dark chocolate tone when it cools down a bit. And the aftertaste reminds me of ketchup, imagine the taste of putting fries dipped with ketchup into your mouth, no kidding.

P.S. I also tried with syphon and it turned out pretty good.

Starting September 18th, we kindly asked: NO LAPTOP AND TABLET. All day, all time.

Just coffee, conversation, a good book, or a little time for doing nothing at all.

I have always wanted my store to be a simple place for relaxing, simple people, simple coffee, and simple moments.

Now I am making a big step forward.

Enjoy coffee, Enjoy life.

Recently I was brewing this CM (Carbonic Maceration) Natural Catimor roasted by 𝐓𝐑𝐀𝐅𝐅𝐈𝐂 𝐂𝐎𝐅𝐅𝐄𝐄 and it gave me another good impression of Vietnamese coffee after the refined robusta. You guys all know that I am not a big fan of Catimor, but since I haven't had CM processed coffee for a long while, I am good to give it a try and I am glad I did.

The berry liked fermented fruity acidity is obvious even in fragrance. In hot, this coffee tastes like cherry jam and the flavour turns to raspberry juice when it cools down. The aftertaste is like chocolate truffle. The aftertaste of Catimor will always contain bitterness, but good after processing and roasting can make it becomes chocolate liked or tea liked.

P.S. This one recently sold out on shelf but will restock soon.
