Raw Ginger Caramel Squares. These little chunks pack a hearty oat and nut base with a chewy, sweet and spicy ginger caramel and are topped with lashings of dark chocolate 👅 Made with very few ingredients these certainly satisfy those decadent cravings! Recipe 👉🏻 Base; blend 1 cup oats with 1 cup nut of choice and add in 2 tbsp cocoa powder and 1/2 cup coconut shreds (or seeds if you prefer), 4 tbsp honey and 4 tbsp coconut oil. Blend until combined and press into lined pan and stick in freezer whilst you make the next layer. Caramel; soak 20 medjool dates in a little hot water (just enough to cover) and after 10 mins add to blender with 1/4 cup dried ginger (chopped), 3-4 tbsp nut / seed butter, 2 tbsp coconut oil and the water. Blend until creamy and add a pinch of salt before smothering on top of the base - add to freezer again. Top with melted dark chocolate, chill and slice! Enjoy 😉 @ Marbella, Spain
