No faff, no fuss just really good cake (that happens to be gluten-free). We focus on taste as well as design only using the finest locally sourced products. All of our curds and jams that go into our bakes are homemade. This Wednesday i am absolutely Buzzing to be taking the horsebox to Great Bentley Anniversary Bike Night!
This one's a bit special for me. I only passed my CBT recently and bought my first bike, so being part of a bike night as a trader is amazing!
If you're coming along, pop over and say hello, grab a coffee and a slice of cake, and have a chat. Looking forward to a great evening, seeing some amazing bikes and meeting loads of fellow bikers.

Yesterday was a much-needed day of rest after a fantastic weekend at Duxford Summer Air Show. Today I'm planning what I'll be baking ready for this weekend's Heybridge Summer Fair. Looking forward to another weekend of great coffee, gluten-free bakes and seeing both familiar and new faces.

Twas the night before Duxford, and all through the bakery, Every bake was boxed so expertly
The brownies were wrapped, the cookies stacked high,
The coffee weighed out for the first sleepy eyes.
The fridge was packed tight, the horsebox all clean, Ready for one of our favourite weekends we've seen.

The checklists were finished, the alarms all set,
Knowing tomorrow would be one we won't forget.
While the aircraft rest quietly beneath the summer sky, By morning they'll roar as they thunder on by.

And as the gates open to another unforgettable Air Show, you'll find us in a new place ready to go.

This week is all about Duxford Summer Airshow the kitchen is about to become a very busy place as I spend the next few days baking, prepping and getting the horsebox ready. I'm bringing all of your favourites, but I've also been working on some new bakes that i cant wait to bring with me. If your popping to Duxford this weekend would be great to see you.

Saturday we was at st lukes school in Tiptree an event we have not visited before so it was lovely to meet some new faces and spend a day doing what we enjoy most feeding people cake and coffee I made so many iced Lattes my ice maker was def working hard! New events are always interesting because you never really know what the day is going to bring and I love see new people enjoying our treats.

Im now having a weeks organising for the Duxford Summer Air Show get some baking plans together and trying to new ideas. Whose coming along for the airshow?

Yesterday marked one year since I changed the way I ran my business. I was back at the Panfield Summer Fete an event that means so much to me. Not just because of the pub itself, but because it was the very first event I did after leaving the shop behind. It was also the event that made me realise I was making the right decision and that building a business around gluten-free baking was not only possible, but something people genuinely wanted.
Last year, I stood there in a gazebo, hoping I was on the right path. This year, I stood there in my horsebox, looking back at just how far things have come in twelve months.
I'm incredibly grateful for everyone who has supported The Phoenix Cake Company on this journey. A huge thank you to Graham, Tracy Tyler and Colin for being the most fantastic team and helping make yesterday such a brilliant day. Sometimes it's easy to get caught up in how far you still have to go, but moments like these remind you to stop and appreciate how far you've already come.

Ripley's 1st Birthday Cake

The second part of my crazy busy weekend was delivering this Octonauts cake for Ripley's 1st birthday. This one was really special for me. A few years ago I made Ripley's parents' wedding cake and when his mum heard that I was coeliac and only make gluten-free bakes, she dropped me a message. Ripley's sister Harley has Coeliac Disease, so it was important to her that Harley could enjoy the birthday cake safely alongside everyone else. Harley is also an absolute superstar. She recently climbed Snowdon to raise money for Coeliac UK, which is an amazing achievement.
This was actually my first bespoke cake in a little while and I forgot just how much I love making them. It was so nice to get creative again and I loved bringing the Octonauts theme to life. A huge thank you to Bev from On The Cake Front - Essex for the printed and acrylic toppers. They finished the cake off perfectly.

Duxford D-Day Flying Day
The first stop on what turned out to be my busiest weekend since opening the horsebox was Duxford's D-Day Flying Day on Saturday.
Although the weather wasn't quite on our side, we still managed to see some incredible aircraft take to the skies and the atmosphere throughout the day was fantastic.
For me, this event was also a chance to trial some brand new products. My new Fondant Fancies made their debut and, safe to say, they were a huge hit! Not only with visitors to the horsebox, but with the staff too. Seeing people's reactions when they realised they were gluten-free was epic. I also introduced a couple of new flavours to the menu:

Biscuit Barrel Rocky Road

Brownie Caramel Crunch

Both of which completely sold out!

In fact, the whole day exceeded my expectations. We sold out, restocked, and then sold out all over again. As a small business owner, those are the days you dream about.
What makes it even more special is that so many people who don't need to eat gluten-free chose our bakes simply because they looked and tasted amazing. A huge thank you to everyone who stopped by for a cake, coffee, or just a chat. Your support means more than you'll ever know.

Next up: a very special birthday cake delivery that reminded me why I love being part of people's celebrations!
