Availability of Chef knives by Catcheside Cutlery, Herefordshire England , William Catcheside has been producing Japanese influenced high end chef knives for well over a decade to a very niche and international market. The latest iteration of his long evolved forged geometry line will be available to buy, a few pieces per week on my website.

No custom orders , I prefer to concentrate on a super high quality low level of production and keep my ideas evolving with one off pieces.
For the rest of summer I plan to make a couple of pieces per week available, hopefully a few more as my summer workshop improvements come into fruition. But keeping the focus on the highest quality work.

Here then is a little showcase of a gorgeous forged geometry Suji, exhibiting huge taper from 9-1mm , and geometry forged to 1.4mm at the top of the narrow convex bevel, Water quenched 1.2442 gorgeousness in the core, pure iron clad, with my standard Wenge Wa handle , workhorse weight with the twist of relatively thin low convex geometry… a slicey dicey dreamboat even if I do say so myself 😜
This and a similarity heavy 270 Gyuto, a mid weight 240 and a small but deadly 160mm Funyaki, will all go live on my Website. Tomorrow about 2pm.
