We’ve taken artisanal linguine and tossed it in a rich, 3-hour simmered Sabah Grouper and chicken broth, elevated with tamarind and our housemade Asam paste. Every bite is packed with the ocean‘s sweetness, featuring pan-seared fresh prawns, squid, and clams, perfectly balanced with cherry tomatoes and fresh herbs.

Having previously worked alongside Chef Barry Quek—our consultant and the creative mind behind Uncle Quek—Chef Terry has developed a profound understanding of Southeast Asian flavours. Building on this foundation, his hands-on expertise from Testina further equips him to elevate Uncle Quek to thrilling new heights.

Stay tuned for the unveiling of our exciting new menu in March, which promises a refreshing approach. Expect a delightful fusion of inventive creations and elevated classics, presented in a sophisticated bistro style that will enhance your dining experience with every visit.

Bak K*t Teh

This pork rib soup dish likely originated in China's Fujian province and was brought to Singapore and Malaysia by Hokkien immigrants.

Uncle Quek’s version is a combination of Teochew and Klang versions which are both famous in Singapore. Chef mixes all the spices and simmers them for an hour, followed by a 2-hour resting time. The soup is served with deep-fried Yau Char Kway and coriander.

這道豬肋骨湯起源於中國福建省,後由福建移民帶到新加坡和馬來西亞。

Uncle Quek 的版本結合了新加坡著名的潮汕和巴生風味。主廚將所有香料混合熬煮一小時,隨後靜置兩小時。搭配油炸鬼和芫荽一起享用。
