As Chef Tony develops each dish, Front-of-House Manager Sean Clark deconstructs its individual components—from the acidity of fermented cabbage to the richness of dried fruits—to find its ideal counterpart. Through collaborative tastings, every pairing is refined to balance acidity, tannins, and flavours.

The goal is to create a synergy where the wine complements the dish and the dish elevates the wine, adding value to both. It‘s a harmony that not only enhances the menu but sparks curiosity with every sip.

We welcomed guests to PATH for an exclusive journey into the world of caviar with earlier this month. Guided by Royal Caviar Club, the afternoon included a 7‑course brunch menu that showcased three varieties of caviar from both hybrid and pure‑breed sturgeon in creative and luxurious expressions.

A heartfelt thank you to everyone who joined us - your presence made this collaboration truly special. We hope you enjoyed the experience, and we look forward to sharing more unique collaborations with you in the future.

Join us on Sunday, 1st February at 1pm for an exclusive Caviar Workshop & Brunch with . Guided by a representative from RCC, the experience begins with a caviar tasting, followed by a 7‑course brunch menu featuring three varieties of caviar from both hybrid and pure‑breed sturgeon.

A highlight of the menu is the Whole Roasted Aged Duck, paired with potato cake, chicken jus infused with tangerine peel, and finished with caviar. To elevate the journey, Blanc de Blancs Champagne will be served throughout the tasting and brunch - included in the price.
