Delicious quick dish made with Window to the Sea frozen range prawns, squid rings & mussels.

Ingredients:
Window to the Sea Prawns, Squid, Mussels.
4-5 tbspoons of olive oil
2 onions finely chopped & 2 celery stalks finely chopped
25g fresh ginger, peeled & finely chopped
A pinch of saffron threads
400g tinned tomatoes, drained of juice
Leaves from a small bunch of fresh coriander, finely chopped
Parsley leaves finely chopped
1 tspoon sugar
Sea salt and freshly ground pepper

Recipe:

Heat 2-3 tbspoons of olive oil in the base of your pan. Add the Window to the Sea mix. Cook for 2-3 mins until they turn opaque. Remove the seafood, put them aside and keep the oil in the pan.

Stir the onions & celery, garlic and saffron into the oil and saute for 3-4 mins, until they begin to colour. Add the tomatoes and half of the herbs. Stir in the sugar and lightly season with pepper and salt. Cook gently, partially covered for 10 mins until the mixture thickens to form a sauce.

Toss the shellfish in the tomato sauce, sprinkle with the remaining coriander and parsley and add a small nob of butter and toss immediately before serving.

Serves 5 depending on quantity of prawns 2kg prawns, 1kg of squid and mussels for the above recipe.
