Chicken Tikka Kali Mirch | Black Pepper and Garlic Chicken Skewers

Traditionally cooked in black pepper; it’s the coarse texture of the peppercorns that infuse the succulent pieces of chicken.

My recipe uses hung yoghurt which has been strained in a muslin. The marinade should be thick and creamy to coat the chicken.

500gms skinless & boneless chicken cut into bite size pieces

5 cloves of garlic

1 green chilli

200gms hung yoghurt/ Greek yoghurt

1 ½ tsp corn flour

½ tsp black peppercorns

½ tsp white peppercorns

½ tsp green cardamom powder

¼ tsp garam masala powder

Salt to taste

Melted butter for basting

Mutton Beliram | Meat Beliram

It was indeed named after a gentleman named Beliram, Beliram was someone who had a shop in Lahore where he would cook mutton so tender that it would get sold off in no time. Slowly, the mutton curry g*ined currency as 'Mutton Beliram' in pre-partition Lahore

Lamb Curry Cut 1.2 kg
Yoghurt 600 gm
Onions , sliced 500 gm
Ginger , chopped 70 g
Garlic , chopped 50 gm
Green Cardamom 10 no
Cloves 5 no
Cinnamon stick 2 no 1 inch size
Salt To Taste
Kashmiri Deghi Mirch 10 gm
Ghee 125 gm
Coriander Seeds 15 gm

Marination

• Mix all ingredients, except coriander seedsand ghee with yoghurt and leave the lamb chunks in this marinade for 2 hours

Method:

1. Heat ghee in handi, add coriander seeds and saute over medium heat until they begin to crackle

2. Transfer the lamb along with the marinade, bring to boil, stirring constantly

3. Cover and simmer , stirring in regular intervals , until the meat is tender

4. Uncover , increase to medium heat and bhunnao till fat leaves the masala

5. Adjust the seasoning and consistensy

I love making Panna Cotta because they are easy, creamy and oh so delicious!
Here is a huge tip when making Panna Cotta: Making food with gelatin is an easy way to make tasty treats, but foods made with gelatin can easily get too rubbery if they sit in the refrigerator overnight.
If you plan on making this recipe ahead of time and aren’t serving it the same day it is made, I suggest using ¼ teaspoon less gelatin than called for. This quantity will ensure a perfect, creamy texture even after the panna cotta has rested in the refrigerator for a day or two.
