This firetruck cake didn’t start as a firetruck… it started as a simple block of chocolate cake.

Structure cakes are all about building, carving, and trusting the process. The offcuts are used to create the form, layers of chocolate ganache hold everything together, and slowly — with a lot of cutting and shaping — the design comes to life.

One of the most common questions I get is about cake weight for carved cakes. Since they’re built and sculpted, the final weight is always an approximation. I usually plan the size based on the number of guests the client needs to serve.

Finished with a smooth ganache base and ready for decoration — and just like that, the firetruck is ready!
