I had a request for a gluten-free carrot cake recently and this was the recipe I concocted; now I’m unsure if I’ll ever make it differently again—!

(Also, happy April✨I had this song playing in the car today and Lilly commented that it ‘sounds like a happy little poem’ —and I thought, isn’t that just how spring should be!)

I’m excited to be offering a few cake classes this winter with ! There is still availability for the two night, start-finish cake course on 12/1-12/2; other courses include an evening of torching meringue on 12/8, cake decorating on 1/14, and another start-finish layer cake class on 2/3-2/4!✨
