Here's a quick recipe on Nigerian rock buns.. also known as "Nigerian hard buns" or "rock buns":
_Ingredients:_
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 cup lukewarm water
- Vegetable oil for frying
- Confectioners' sugar for dusting (optional)
*Instructions:*
1. In a large mixing bowl, combine flour, sugar, and salt.
2. Mix well.
3. Gradually add the lukewarm water and mix until a smooth dough forms.
4. Knead the dough for 10-15 minutes until it's elastic and smooth.
5. Place the dough in a greased bowl, cover it with a damp cloth, and let it rest in a warm place for 30-45mins
6. Preheat the oil in a deep frying pan over medium heat.
7. Once the oil is hot, use a spoon to drop small balls of dough into the oil, about the size of a golf ball.
8. Fry the buns until they're golden brown, about 3-4 minutes on each side.
9. Remove the buns from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
10. Dust the buns with confectioners' sugar (if desired) and serve warm.
*Tips:*
- Make sure the oil is hot enough before frying the buns. If the oil is not hot enough, the buns will absorb too much oil.
- Don't overcrowd the frying pan. Fry the buns in batches if necessary.
- If you want your buns to be extra crunchy, you can try adding a little bit of baking powder to the dough.
