Greek Lemon Pepper Chicken Skewers with Garlic Feta Sauce

For the Chicken

1.5 lb (700 g) chicken breast, cut into cubes

3 tbsp (45 ml) olive oil

3 tbsp (45 ml) lemon juice

2 cloves garlic, minced

1 tsp lemon zest

1 tsp salt

1 tsp black pepper

1 tsp dried oregano

For the Garlic Feta Sauce

1 cup (150 g) feta cheese

¼ cup (60 ml) Greek yogurt

2 tbsp (30 ml) olive oil

1 clove garlic

1 tbsp (15 ml) lemon juice

Garnish

Fresh parsley

Extra lemon wedges

Directions

In a bowl, mix olive oil, lemon juice, garlic, lemon zest, salt, pepper, and oregano.

Add chicken cubes and marinate for at least 30 minutes.

Thread chicken onto skewers.

Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked and lightly charred.

Blend feta, yogurt, olive oil, garlic, and lemon juice until smooth and creamy.

Serve chicken skewers with garlic feta sauce.

Garnish with fresh parsley and lemon wedges.

Serve warm.

Teriyaki Chicken Rice Salad Bowl

This Teriyaki Chicken Rice Bowl is so good… you’ll want it for lunch every single day 🤤🥗
Chicken & Seasoning
2 boneless chicken breasts (about 400 g)
½ tsp salt (3 g)
½ tsp black pepper (2 g)
½ tsp garlic powder (2 g)
½ tsp paprika (2 g)
1 tbsp oil (15 ml)

Teriyaki Sauce
2 tbsp soy sauce (30 ml)
2 tbsp honey (40 g)
1 tbsp brown sugar (12 g)
1 tbsp rice vinegar (15 ml)
1 tbsp sesame oil (15 ml)
2 cloves garlic, minced (6 g)
1 tsp grated ginger (5 g)
1 tsp cornstarch (3 g) + 2 tbsp water (30 ml)

Salad Bowl
2 cups cooked jasmine rice (320 g)
1 cup shredded lettuce (50 g)
½ cup shredded carrots (60 g)
½ cup cucumber slices (75 g)
½ avocado, sliced (80 g)
½ cup sweet corn (80 g)
1 tbsp sesame seeds (9 g)
2 tbsp chopped green onions (15 g)

Instructions

Season the chicken with salt, black pepper, garlic powder, and paprika. Mix well.

Heat oil in a pan over medium heat and cook chicken for 5–6 minutes per side until golden and fully cooked.

Remove chicken from the pan and let it rest for 2–3 minutes, then slice into thin strips.

In the same pan add soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Simmer for 2 minutes.

Add the cornstarch slurry and cook until the sauce thickens.

Add the sliced chicken back into the sauce and toss until well coated with the glossy teriyaki glaze.

In a bowl add warm jasmine rice as the base.
Arrange lettuce, carrots, cucumber, avocado, and corn around the rice.

Place the sliced teriyaki chicken on top of the rice, drizzle extra sauce, and sprinkle sesame seeds and green onions.

Serve warm and enjoy 🥗🍗
