Greek Lemon Pepper Chicken Skewers with Garlic Feta Sauce
For the Chicken
1.5 lb (700 g) chicken breast, cut into cubes
3 tbsp (45 ml) olive oil
3 tbsp (45 ml) lemon juice
2 cloves garlic, minced
1 tsp lemon zest
1 tsp salt
1 tsp black pepper
1 tsp dried oregano
For the Garlic Feta Sauce
1 cup (150 g) feta cheese
¼ cup (60 ml) Greek yogurt
2 tbsp (30 ml) olive oil
1 clove garlic
1 tbsp (15 ml) lemon juice
Garnish
Fresh parsley
Extra lemon wedges
Directions
In a bowl, mix olive oil, lemon juice, garlic, lemon zest, salt, pepper, and oregano.
Add chicken cubes and marinate for at least 30 minutes.
Thread chicken onto skewers.
Grill over medium-high heat for 10–12 minutes, turning occasionally, until fully cooked and lightly charred.
Blend feta, yogurt, olive oil, garlic, and lemon juice until smooth and creamy.
Serve chicken skewers with garlic feta sauce.
Garnish with fresh parsley and lemon wedges.
Serve warm.
