Char Siu Fried Rice (叉燒炒飯)

Ingredients:
* 4 cups cooked white rice, preferably leftover and cooled
* 6 ounces Char Siu (Chinese BBQ pork), cubed
* 2 eggs, beaten
* 1 tsp salt
* 1 tsp sesame oil
* 2 Tbsp oil
* 1 cup frozen peas and carrots, thawed
* 1 Tbsp soy sauce

Instructions:
1. In a large bowl, fluff up the cooked white rice with a fork and set it aside. If using leftover rice, make sure it has cooled down before using it.
2. Cut the Char Siu into small cubes and set them aside.
3. In a small bowl, beat the eggs together with 1 tsp salt and 1 tsp sesame oil.
4. Heat a wok or large skillet over medium heat and add 2 Tbsp of oil.
5. When the oil is hot, pour in the beaten eggs and stir-fry for about 10 seconds, until they start to set.
6. Add the cooked white rice to the pan with the eggs and continue to stir-fry for 3-5 minutes until the rice is heated through and the eggs are well mixed in.
7. Add the cubed Char Siu and thawed peas and carrots to the pan and stir-fry for an additional 2 minutes.
8. Turn the heat to high and add 1 Tbsp of soy sauce to the pan. Stir-fry for one more minute until everything is well combined and heated through.
9. Remove from heat and serve the Char Siu Fried Rice hot as a main dish or side dish. Enjoy!
