From the bottom of our hearts, we thank the guests that showed up at Saga for support. It warms our hearts to see such a response to our call for help. We are also deeply touched by friends in the industry who have reached out, it means so much to us and we hope to continue spreading this love in this turbulent industry, especially to independent restaurants.

Saga will close on Saturday, 31 August.

We hope to see everyone again this August. Remember it is not a good-bye, but a “see you later” for there will be a next chapter to this Saga!

It is with a heavy heart that we have to write about this.

Our summer season is not quite turning out how we had planned and we had not foreseen such a drastic drop in bookings. This hurts us especially so as we are a small and independent restaurant.

So, we really need your support in order to survive this season. Please share and spread the word.

Say hello to Lovisa ! We are grateful that she jumped in to help at Saga’s first pop-up event and has been an integral part of us ever since.

Lovisa is always ready to meet our guests with a warm smile on her face and the professional service setting at Saga has been developed by her from the first day that we opened our doors.

If you have been to Saga, you may have noticed the wonderfully scented candles in our bathroom. Every weekend, Lovisa collects the remaining stearin from our table side candles and she gives them a second life as a new scented candle!

A dinner at Saga not only comprises of seasonal produce, it is also complemented by various ferments and garums (typically fish or seafood sauce) that have been started years ago by Pearly. The ferments that we make not only provide probiotics good for your gut, they also have unique flavour profiles for the dishes at Saga.

Some of our guests have been surprised that the ferments are older than Saga! Time is a crucial step for fermentation, and Pearly has been fermenting foods from years before with a goal of using them in the future that is now Saga.

This winter season we have a spiced tea chocolate mousse crafted with the finest white chocolate from , a company that selects sustainable and fair-trade cocoa beans from small farmers in Ecuador and then crafts the chocolate in Sweden. The decadent mousse is paired with a velvety mulled red wine gel, lightly dusted with soft white chocolate snow and adorned with a delicate cocoa tuile.

Meet our Sous Chef, Olivia Hallberg! Both her and Pearly met while working together at Vrå in 2017. They became fast friends that worked in perfect sync and knew that they wanted to collaborate with each other again in the future, which is now at Saga.

Olivia comes from a family of chefs and she brings with her a deep understanding of Swedish produce and seasons, as well as her creative eye. Her favourite sauce is ponzu, a soured soy, which she will gladly have with a bowl of rice after work! 🍚

Swedish mussels with curry emulsion, fermented potatoes, flower sprouts, smoked crème fraîche and a curry tuile.

This dish is a progression from the initial potato mousse with curry and fried mussels, from when Saga first opened. Flower sprouts are incorporated as they are in season now and adds another dimension of winter flavour here.

We are also curious to see how this dish will develop in the future seasons!

We are happy to announce that we have recently achieved a green circle in the along with other peers in Scandinavia!

It has been full speed ahead since our opening in October and we are still working on improving all aspects of being sustainable and we are thankful that our current efforts are being recognised.

It is also great to see that the awareness for being sustainable is growing in the Nordics. We will keep fighting the good fight, and also bring more of the South East Asian food and flavours to light.

The latest Winter dish at Saga: hand-cut noodles with a fish milk broth and pumpkin.

The sauce of this dish was inspired by “fish bee hoon” in Singapore, a rice noodle dish served with a delicious milky fish soup. For this dish, Sous Chef has developed noodles that are made with organic Swedish flour from . The noodle dough is hand-cut and cooked fresh upon each serving. A chunky pumpkin purée and slices of fermented pumpkin are hidden under the noodles and the dish is topped off with a splash of langoustine-chilli oil.
