What’s cooking in Chef Michael’s kitchen today?

Today’s lunch is stewed chicken with coconut rice. While it isn’t native to any specific country, it is a good example of how the flavors of Africa, the Caribbean, and North America have come to interact over the last 400 years. You can find some version of this all through the southern United States, into the islands of the Caribbean, and down into Central and South America.

Thursday’s Lunch From Around the World was veggie ramen. Traditionally a Japanese dish, ramen is made from wheat noodles (rice noodles for our GF friends) and served in a flavorful broth. Our broth was flavored with roasted veggies, miso paste, and soy sauce (tamari is the GF substitution), and the dish was accompanied by a side of bean sprouts, hard-boiled egg, and scallion. #

Today’s AMAZING Lunch From Around the World was a celebration of Moroccan flavors. Pearl couscous tossed with citrus and raisins was topped with vegetables roasted in Chermoula, herbs, spices, and olive oil,and topped with an herbed soft cheese called Jbal. The whole dish was served with a side of flatbread.
