Fajita season is here!!!

Dean & Peeler Prime Reserve Skirt is now $11.99/lb now through Saturday 10/24.

Inside skirt is a long, flat cut from the plate, the lower belly of the animal. It's the original fajita steak, first grilled by Texas ranch hands over open fires.

It's one of the beefiest-tasting cuts out there. The loose grain soaks up marinade, and that marbling melts on high heat for a savory crust and juicy, tender bites.

How to cook it:
Marinate 2–8 hours (lime, garlic, cumin, chili powder)
Sear hot and fast, about 3–4 minutes per side
Rest 5 minutes, then slice thin against the grain

Pile it into warm tortillas with charred peppers and onions. Cold weather doesn't stand a chance.
