Tuesday around four, a fella named Marcus came in still in his hiking boots. He'd driven down from the Parkway and needed something for his dad before Sunday. We walked him through the case and he built a Custom 3 Chocolate Bar Sampler — coffee, pretzel, and a pure white for good measure. Then he grabbed a fourth. The Coffee Bar smells like the first pour of the morning before you even unwrap it. Snap off a corner. You'll see real coffee flecks running through the milk chocolate. A dad came in Saturday afternoon with two kids fresh off the Smoky Mountain Railroad, still in their little engineer hats. The kids each picked something loud and colorful. He grabbed a quiet slice of Chocolate Peanut Butter Fudge for the ride home to Atlanta, and told me his own dad used to split a piece with him up here every summer. Three generations, same counter. Funny how that's still happening.

Father's Day is a week from tomorrow. If your dad's the type who swears he doesn't want anything, he's lying. Our build-a-box six-slice runs a full three pounds and you pick every slice yourself. You can smell the bourbon pecan before you see the case. Walk in off Everett Street on a warm afternoon and it's the first thing that hits you, right behind the chocolate. Dad's the hard one to shop for every year (mine just says 'don't get me anything'), but a half-pound slice of this with the toasted pecans set right in has never once come back unopened. Diane will cut it fresh and wrap it while you decide on the rest. Father's Day is the 21st this year.

Ever notice how Everett Street fills up the second the GSMR pulls back into the depot? That's our busy stretch. Folks come off the train still smelling like coal smoke and summer pine, and most of them wander in hungry. The Turtle Bark tends to disappear on those afternoons. Caramel goes in last. We pour the chocolate base onto the marble, then Denise ribbons the salted caramel across the top before it sets. You've got maybe a minute before it firms up too much to swirl. Ran the salted caramel batch this morning before the doors opened, and the kitchen still smells like it. If you've only had ours from the case, you haven't seen the part that makes it worth the trouble. Send this to someone who needs a sweet surprise.
