This refreshing lentil quinoa salad is an easy and delicious side dish for any cookout and dinner or a healthy lunch option served with romane lettuce and grilled chicken. Make it the night before and it’ll taste even better!
Tip: always cook some extra lentils and quinoa to add in case the spice level and the flavors are too intense for your taste.

Ingredients:
1 and 1/2 cup cooked green lentils
1 and 1/2 cup cup cooked quinoa
2-3 large green onions
1/4 cup chopped cilantro (add more if you’re a fan)
1 green or red serrano pepper, vines and seeds removed (add both if you prefer more heat)
1/4 cup good extra virgin olive oil
2 tbsp red wine vinegar
Zest of 1 lime
Juice of 1/2 lime
1 heaping tsp dijon mustard
1 tsp garlic powder
1 tsp kosher salt
1/2 tsp black pepper

Preparation:
Toss the lentils, quinoa, cilantro, onions and serrano pepper together. Mix the the rest of the ingredients in a mason jar, cover and shake until fully blended. Toss with the grains, refrigerate for at least 2 hours and give it a little mix before serving, to make sure the dressing is absorbed and evenly distributed.

This foolproof banana bread is easy to make and so delicious! Enjoy freshly baked with a scoop of ice cream or a cup of tea (depends on what you’re in mood for) and save some for your morning coffee.
It’s also a fantastic loaf to make for the holidays. The hint of cinnamon pairs perfectly with some maple butter for breakfast or pumpkin spice ice cream for dessert.

Ingredients:

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
1 tsp cinnamon
1 cup sugar
2 eggs
1 tsp vanilla extract
3-4 very ripe bananas
1/2 cup (1 stick) melted butter
Optional: 1/4 cup chopped walnuts, chocolate chips or any variety of dried fruit.

Preparation:
In a small saucepan melt the butter and let cool.
Sieve the dry ingredients into a large mixing bowl.
In a separate bowl mix the eggs and sugar and beat with a mixer for 2 min or whisk by hand until smooth and well combined.
In a small bowl mash the bananas, add the vanilla extract and melted butter. Add the egg mixture (and the nuts, chocolate or dried fruit if you’re using any).
Add the wet ingredients to the dry ingredients and fold in until combined (do not over mix).
Transfer the batter into a greased loaf pan and bake at 350F for about 1 hour. Check with a toothpick for doneness and bake another 5-10 minutes if the toothpick comes out moist. Let cool for 20-30 min on a wire rack before slicing.

The spicy, garlicky aglio e olio spaghetti is a light yet satisfying pasta for a quick weeknight dinner. With only 15-20 min prep time all you need to do is simply boil the spaghetti al dente in very salty water, simmer the sliced garlic in olive oil (you’ll need one whole head. Yes, it’s a lot of garlic, but it’s totally worth it!) a teaspoon of red pepper flakes, a teaspoon of aglio olio seasoning, zest of one lemon and a splash of lemon juice. Add the pasta + a cup of pasta water, continue to cook over low heat for another minute or 2. Make sure not to overcook the pasta. Toss with a cup of chopped parsley. Drizzle with some more olive oil and enjoy!
