This refreshing lentil quinoa salad is an easy and delicious side dish for any cookout and dinner or a healthy lunch option served with romane lettuce and grilled chicken. Make it the night before and it’ll taste even better!
Tip: always cook some extra lentils and quinoa to add in case the spice level and the flavors are too intense for your taste.
Ingredients:
1 and 1/2 cup cooked green lentils
1 and 1/2 cup cup cooked quinoa
2-3 large green onions
1/4 cup chopped cilantro (add more if you’re a fan)
1 green or red serrano pepper, vines and seeds removed (add both if you prefer more heat)
1/4 cup good extra virgin olive oil
2 tbsp red wine vinegar
Zest of 1 lime
Juice of 1/2 lime
1 heaping tsp dijon mustard
1 tsp garlic powder
1 tsp kosher salt
1/2 tsp black pepper
Preparation:
Toss the lentils, quinoa, cilantro, onions and serrano pepper together. Mix the the rest of the ingredients in a mason jar, cover and shake until fully blended. Toss with the grains, refrigerate for at least 2 hours and give it a little mix before serving, to make sure the dressing is absorbed and evenly distributed.
