Kitty's Cosmopolitan Club, led by Partner Kevin Beary and Bar Manager Tyler MacLellan, was built around precision and ritual, from a -16°F freezer bar for impossibly cold martinis to trolley-side pours and the “Dirty Martini and a Half” resting on crushed ice beside blue cheese deviled olives.

Lately, the influence has been spilling well beyond the room itself, including a recent spotlight from Chicago magazine.

Some memories don’t feel big while they’re happening. They look more like this: sunset over the Pacific, s’mores by the fire and a quiet moment on a 150-foot bluff above Salt Creek Beach at The Ritz-Carlton, Laguna Niguel, opened in 1984 and still deeply tied to Dana Point’s surf culture, right down to the vintage boards displayed throughout the resort.
