I have struggled for years to make good biscuits. I’ve used the frozen butter “ trick” I’ve used pastry cutters, and even froze the biscuits before putting them in the oven. Absolutely none of those things worked. They were always crumbly. This morning as I have been home sick I was craving a good biscuit, not wanting to go to the store and get anyone else sick I decided to change my approach. The thousand layer method is the way to go! This may seem more labor-intensive, but with all the failed biscuits in my past, I don’t mind spending a bit of extra time to get a perfect flaky biscuit!
The way this works is by combining your flour, salt, baking powder, and buttermilk on its own.
Then you put butter between two pieces of wax paper And roll it out very thinly.
Place your dough on a piece of wax paper and then layer the thin butter on top of that dough.
Fold the dough over itself and roll it back out flat.
Repeat this many many times, then cut them out with your favorite jar or cookie cutter ring and bake them at 400 for 12 to 14 minutes.
Can I give you a full recipe? No.
Did I measure anything? Absolutely not.
