STICKY BAKED CHICKEN WINGS
INGREDIENTS
for the chicken wings:
3 pounds chicken wings
3 tablespoons olive oil
½ teaspoon salt
for the sauce:
½ cup ketchup
½ cup apple vinegar
¼ cup soy sauce
½ tablespoon fresh lime juice
1 tablespoon honey
1 teaspoon chili powder
for garnish:
Chopped green onions and sesame seeds

INSTRUCTIONS
Preheat oven to 325F (165C). Line 2 large baking sheets with baking pepper. In a large bowl, toss the wings with oil and salt.
Place the wings on each baking sheets in a single layer. Bake until lightly browned, for 40 minutes.
Meanwhile, whisk all the ingredients fort he sauce in a medium saucepan and bring to a boil. Cook over moderate heat until it thickens, stirring occasionally, about 15 minutes.
Increase the oven temperature to 450F (230C). Transfer the wings into the sauce. Replace the baking paper on each baking sheet with clean ones. Arrange the wings in a single layer on each baking sheet and bake for 15 minutes more.
You can serve the wings as they are now or toss them into the remaining sauce and garnish with chopped green onions and sesame seeds.

Chili Lime Steak Tacos
Ingredients
for 4 servings

½ lb top sirloin steak
pico de gallo, or salsa of your choice
4 corn tortillas

AVOCADO CILANTRO LIME SAUCE
1 ripe avocado
⅓ cup fresh cilantro
3 tablespoons lime juice
⅔ cup water
salt, to taste

CHILI LIME RUB
1 ½ teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 clove garlic, minced
2 tablespoons lime juice, or 1 lime

Preparation
Place the avocado, cilantro, lime juice, water, and salt in a blender or food processor. Blend until smooth and set aside.
In a small bowl, combine the chili powder, cumin, oregano, salt, pepper, garlic, and lime juice.
Rub the chili lime rub all over the steak in a thin, even layer.
Grill the steak on either a grill or stove-top grill pan. To get the “X” grill marks, sear the steak for 1 minute, then adjust about 90 degrees and grill for another minute. Flip the steak when you’ve achieved desired grill marks and repeat the process on the other side.
Allow the steak to rest for 5-10 minutes once taken off the heat.
Slice the steak thinly, against the grain of the meat.
Prepare the tacos by topping the corn tortillas with a few strips of meat, salsa, the avocado cilantro lime sauce, and cilantro, and serve.

THE BEST MARINATED GRILLED STEAKS
INGREDIENTS
1 lb of steak (approx. 2 average size steaks)
Himalayan or sea salt & freshly ground pepper, to taste

MARINADE
2 tbsp avocado oil
2 tbsp tamari
2 tbsp Worcestershire sauce
1 tbsp maple syrup
2 garlic cloves, minced
1 small shallot, finely chopped
Freshly ground pepper, to taste

INSTRUCTIONS
Whisk together all the ingredients for the marinade.
Place the steaks and marinade in a covered glass dish or Ziploc bag. Marinade for an hour at room temperature or up to 12 hours in the fridge. Remove steaks from the fridge 20-30 minutes before cooking.
Preheat the BBQ on high until heated to 450-500F.
Remove the steaks from the marinade and pat them down with paper towels. Either oil the grill or the steaks. Season steaks with salt and pepper.
Grill steaks to your preference. Medium has an internal temperature of 140F (approx. 4 min per side for a 1 inch thick steak). Rest for 5 minutes before serving.
