Cortado
Our coffee journey leads us to our next country, Spain. This drink originates in the northern region of Basque. Its creation displays the culture of Spain, a place run by coffee and siestas.
The word, Cortado, derives from “cortar” the Spanish verb meaning “to cut”. As the milk in this drink does just that cutting through the strong flavor of espresso giving it a more balanced flavor.
How is this drink prepared? Using an espresso machine pull a double shot of espresso and then steam the milk. The steamed milk is incorporated in to the espresso until an inch of foam is created on top of the drink. It’s comprised in equal parts espresso and milk, 2 oz espresso and 2 oz steamed milk, creating a drink at 4oz.
There are a couple close variations of the cortado as it traveled to the Iberian Peninsula making its way into Portugal, and then to Cuba, and other Latin American Countries. There also seems to be a version in Greece that is similar. Some variations kept the name but added their own twist, while others gave it an entirely different name but similar drink.
