Cortado

Our coffee journey leads us to our next country, Spain. This drink originates in the northern region of Basque. Its creation displays the culture of Spain, a place run by coffee and siestas.

The word, Cortado, derives from “cortar” the Spanish verb meaning “to cut”. As the milk in this drink does just that cutting through the strong flavor of espresso giving it a more balanced flavor.

How is this drink prepared? Using an espresso machine pull a double shot of espresso and then steam the milk. The steamed milk is incorporated in to the espresso until an inch of foam is created on top of the drink. It’s comprised in equal parts espresso and milk, 2 oz espresso and 2 oz steamed milk, creating a drink at 4oz.

There are a couple close variations of the cortado as it traveled to the Iberian Peninsula making its way into Portugal, and then to Cuba, and other Latin American Countries. There also seems to be a version in Greece that is similar. Some variations kept the name but added their own twist, while others gave it an entirely different name but similar drink.

A new addition! She’s a beaut!

We’ve been wanting to upgrade our generator and last event our original generator decided it wanted to retire. This past weekend we were priming it for our up coming pop-up, this Saturday @ Rotary Park 10am-4pm. Swing on by and see for yourself, maybe get a yummy drink too. 😉

Macchiato

A traditional Macchiato might be a little bit different than the Macchiato you might be buying at some coffee shops. Let’s do a little dive into traditional Macchiatos.

The word Macchiato translates from Italian to mean “marked” or “stained”. This time in reference to the amount of milk/foam that is put on the drink. The drink is comprised of either a single or double shot, after which a dollop of foam is placed on top. There is a newer variation of incorporating a little bit of well steamed milk into the espresso, leaving a little foam staining the top of the crema. Creating a beautiful contrast between the dark espresso and white milk foam. Making a cute little beverage at 3oz or so that is very espresso forward, that doesn’t take long to drink.

Espresso D’Messo Post Alert!!

Lungo

The conclusion of the espresso journey ends with a Lungo. The word Lungo translates from Italian to “long”. Another name giving hint to what happens in the process, this espresso uses the same starting amount of ground coffee with double the amount of output as traditional espresso.

Let’s look back at the formula that we use for traditional espresso a couple posts ago and use those numbers. Starting point being 18-20 grams of ground espresso pushed through the espresso machine in double the time, 50-60 seconds, with a shot of 72-80 grams of espresso being made, ready to drink with a ratio of 1:4. (We’ll touch more on ratios in future posts. 😉 )

It’s more in volume of a drink for you to consume with a thinner layer of crema on top, a lighter body in a more bitter and strong shot.

Bonus Material: Lungo shots are very diverse , an exact recipe is not as common to find. As there is also debate on how the ratio of coffee extraction ranges from 1:3-1:6. This range means for every 1 gram put into the espresso 3-6grams can be extracted on the finished drink. So a lungo is anything longer than an espresso and is often catered to the person’s personal preference and desired flavor outcome.

Ristretto

Another type of espresso is risttreto. The word ristretto means “restricted” or “short” the perfect wording for this little espresso. The reason being that it is created in the same fashion as traditional espresso with the exception of the time in pulling the shot being shorter and with half the amount of water being used.

Comparison of numbers: traditional espresso has 18-20 grams of ground coffee placed into the espresso machine, being “pulled” between 25-30 seconds creating 36-40 grams of espresso to drink. Whereas ristrestto starts with the 18-20 grams of ground coffee placed in the machine, being pulled between 20-25 seconds creating 18-20 grams of espresso.

This process is known to create a sweeter more aromatic & less acidic shot where bitterness is not as common. This is the type of espresso that we serve here at Sojourners! We serve all espresso drinks with a double ristretto shot to make tasty drinks for you to enjoy.
