🍞 Ever wonder why sourdough uses stretch & folds instead of kneading?

When I first started baking sourdough, I kept asking myself:

“Why can’t I just knead it like regular bread?”

The answer is that sourdough develops differently.

Instead of intensive kneading, stretch & folds gradually strengthen the gluten while the dough continues fermenting.

Then comes the part many beginners find strange…

You wait.

That resting time isn’t wasted.

During each rest:
✨ Fermentation continues.
✨ The gluten relaxes.
✨ The dough becomes easier to stretch.
✨ More gas is produced and trapped inside the dough.

That’s why you’ll notice the dough changing after every round of folds—it becomes smoother, stronger, more elastic, and easier to handle.

One of the biggest lessons I’ve learned is that sourdough isn’t just about what you do to the dough…

📌 Beginner Sourdough Tip: Stop Watching the Clock! ⏰🍞

One of the biggest lessons I learned is that bulk fermentation doesn’t end because the timer says so—it ends when your dough is ready.

Bulk fermentation starts the moment you mix your starter with the flour and water. Stretch & folds happen during this stage, but they don’t restart the clock.

Here are the signs I look for before shaping:

✅ Dough has increased in volume
✅ Small bubbles are visible around the sides and on top
✅ The surface is slightly domed
✅ The dough jiggles when the bowl is gently shaken
✅ It feels lighter and less sticky
✅ It begins pulling away from the sides of the bowl

Every kitchen is different. Your room temperature, starter strength, flour, and hydration all affect fermentation time.

That’s why they always say:

🍞 Watch your dough, not your timer.

How to Know When Bulk Fermentation Is Done | Beginner Sourdough Tips

🍞 How do you know when bulk fermentation is done?

This was one of my biggest struggles when I started baking sourdough.

I kept following recipe times exactly, but my loaves were still coming out dense.

One thing I didn’t realize at first:
👉 Bulk fermentation starts the moment you mix your starter with the flour and water—not after the stretch and folds.

The folds are simply done during bulk fermentation to help strengthen the dough.

Instead of watching the clock, look for these signs:

✨ Dough looks noticeably puffier
✨ Small bubbles are visible on the sides, bottom, or surface
✨ The dough jiggles when you gently shake the bowl
✨ It feels lighter and more airy
✨ The dough is less sticky than when you first mixed it
✨ The dough starts pulling away from the sides of the bowl
✨ Volume has increased (the exact amount depends on dough temperature and recipe)

Temperature, starter strength, hydration, and your kitchen environment all affect fermentation time.

That’s why the same recipe can take 4 hours one day and 8 hours the next.

The biggest lesson I learned?

🍞 Watch your dough, not your timer.

Learning to read your dough was the single biggest thing that improved my sourdough results.
