I dry-aged this small slice of Gorgonzola for 7 months.. and the result is simply incredible. Sweet, sour,bitter, spicy, dry but it melts in your mouth like a candy turning creamy . Great pairing w a bottle of Sauternes ‘83. Pure umami! # instagood
