It’s been a wild I don’t post about what I have been cooking lately or been working on.

Well here is a dish I’ve always wanted todo but just have never had the chance to work on until now.

Tonkatsu frog 🐸 legs.

Marinated in kombu butter milk, breaded in bonito flakes & panko and a few secret spices.

Frog leg egg roll- filled with confit garlic and leeks

Sauce is a roasted garlic lime aioli

Salad- smoked fennel, charred edamame, jujube, fresh Yuzu juice and volcanic sea salt.

Here is a new dish. This is version number #17. Chili Lobster 🦞

Sauce is made by roasted onion, tomato, house made chili paste, dry and fresh pepper variations, curry, cognac & sake cooked down and blended with herbs.

Lobster half shell is filled with duck fat and chili sauce and grilled.

Served with rice and a grilled lemon cover in togarashi and a nori blend.

So here is a spin to one of my favorite dishes to make!!! This is the 3rd pasta to hit the special menu. Really pumped for this new edition!!!

Black hawk ground beef, mirepoix of shiitake, carrots, celery, and onion,lemongrass cream, and dry sake. Fresh wasabi, aosa nori, Grana padano.

Steak and Potato #33
14 day dry aged ribeye, top w/ Black Sea salt and crispy shallots, russet potato poach in salted butter & whole milk, seasoned with dry shiso, volcanic salt, garlic mochi croutons, scallions and a fresh wasabi.

Very interesting in this version the side dish of this delightful 14 day dry aged ribeye was particularly puzzling. I been working on poaching vegetables and different meats in butter and oils. On working in a potato that is poached in butter and vanilla miso paste, a butter and milk version came along and it was a wonderful addition to the dry aged steak. The fresh wasabi brings a fresh spicy element to the dish that makes it a killer!!!
