It’s been a wild I don’t post about what I have been cooking lately or been working on.
Well here is a dish I’ve always wanted todo but just have never had the chance to work on until now.
Tonkatsu frog 🐸 legs.
Marinated in kombu butter milk, breaded in bonito flakes & panko and a few secret spices.
Frog leg egg roll- filled with confit garlic and leeks
Sauce is a roasted garlic lime aioli
Salad- smoked fennel, charred edamame, jujube, fresh Yuzu juice and volcanic sea salt.
