Behind every creation is a little bit of chaos, a whole lot of butter, countless tiny adjustments, and an unreasonable amount of hope.

People see the donut.

I remember every failed batch that got me here.

That’s the thing about recipe development… you don’t know you’re one tweak away from magic until suddenly you are.

This one was worth every sleepless night.

This week’s R&D leftovers were getting a little out of hand.

So naturally I wrapped mango sticky rice, pulled pork mac & cheese, brisket mac & cheese, and chicken mac & cheese in wrappers and fried them.

As one does.

They may not be much to look at.

But they’re the kind of thing that makes you take one bite and immediately say:

Wait… make me another one. I think I’m getting a little out of hand with all this creating but I’m having the time of my life being back in the kitchen .

FRIED CHICKEN & SMOKED GOUDA MAC

This isn’t “good for gluten-free.”

This is just good food.

Buttermilk-brined chicken coated in our house-made gluten-free brioche breadcrumbs and seasoned with Spicewalla N’ashville Hot Chicken Seasoning, served over creamy smoked gouda mac & cheese and finished with flaky sea salt and a touch of dill..

Good food. Local ingredients. Gluten-free always.

It’s funny the things that stick with you.

Almost every Friday during the summer, my Papa would bring my cousin Joey and me to Miami to pick out tropical fish for our family pet store. We weren’t there for the food… we were there because somebody might miss out on the unique candies the ladies in the office would give us😂

But once we were done, that was our time.

We’d find a little Cuban bakery, grab guava pastries and strong Cuban coffee, and then we’d wait…

Because if you knew my Papa, you knew he wasn’t leaving anytime soon. That man could make a best friend standing in line at the grocery store. He’d find someone to talk to, Joey and I would roll our eyes, eat our pastries, sip our coffee, play UNO and wait for him to finish solving the world’s problems.

Looking back… I’d give anything to wait on him one more time.

So when I was dreaming up new flavors for Rebel Whisk, I kept coming back to those Fridays.

Meet Miss Behavin’.

She’s sweet, a little tart, and full of the kind of memories that remind you food is never just food. It’s the people you shared it with.
