🥪🌀 Ham & Turkey Pinwheels 🌀🥪

Ingredients:

4 large flour tortillas (10-inch size)

4 oz cream cheese, softened

2 tbsp mayonnaise or sour cream

1 tsp Dijon mustard (optional for a little tang)

1/2 tsp garlic powder

1/4 tsp black pepper

4 slices deli turkey

4 slices deli ham

4 slices cheddar or Swiss cheese

1/2 cup shredded lettuce

1/4 cup finely chopped red bell pepper (optional, for color and crunch)

Directions:

Make the spread:
In a small bowl, mix the softened cream cheese, mayo or sour cream, mustard (if using), garlic powder, and black pepper. Stir until smooth and creamy.

Layer the goodies:
Lay out a tortilla on a clean surface. Spread a thin, even layer of the cream cheese mixture all the way to the edges.

Add meats and cheese:
Place 1 slice each of turkey, ham, and cheese on top. Scatter a handful of shredded lettuce and a sprinkle of chopped red pepper over the surface.

Roll it up:
Starting at one end, roll the tortilla up tightly, jelly-roll style. Repeat with the remaining tortillas and fillings.

Chill and slice:
Wrap each rolled tortilla in plastic wrap and chill in the fridge for 30 minutes (this makes slicing easier). When ready to serve, trim the ends and slice each roll into 1-inch pinwheels.

🍦🥜 High Protein Pistachio Ice Cream 🥜🍦

Ingredients:

1 1/2 cups plain Greek yogurt (2% or full-fat for best texture)

1/2 cup unsalted shelled pistachios

1/3 cup vanilla protein powder (whey or plant-based)

1/4 cup honey or maple syrup (adjust to taste)

1/2 tsp almond extract (or vanilla extract if preferred)

1/2 cup unsweetened almond milk (or milk of choice)

Pinch of salt

Optional: 1–2 drops green food coloring for classic pistachio hue

Directions:

Soak and blend pistachios:
Soak the pistachios in hot water for 10–15 minutes to soften. Drain and add to a high-speed blender with almond milk. Blend until very smooth and creamy.

Chill the mixture:
Transfer the mixture into a shallow freezer-safe container. Smooth out the top and cover with a lid or plastic wrap.

Hey there, cozy dessert fan! 🍑🧡 Ready to bring back some classic Southern charm? This Old-Time Oven Peach Cobbler is warm, buttery, and bursting with juicy peaches—just like Grandma used to make!

🥧🍑 Old-Time Oven Peach Cobbler—Warm, Buttery, and Full of Peachy Goodness 🍑🥧

Ingredients:

For the filling:

6–7 fresh ripe peaches, peeled and sliced (about 6 cups)

3/4 cup granulated sugar

1/4 cup light brown sugar

1 tbsp lemon juice

1 tsp vanilla extract

1/2 tsp ground cinnamon

1 tbsp cornstarch (optional, for thicker filling)

For the buttery batter topping:

1/2 cup unsalted butter (1 stick), melted

1 cup all-purpose flour

1 cup granulated sugar

2 tsp baking powder

1/4 tsp salt

3/4 cup whole milk

1/2 tsp vanilla extract

Optional topping:

A sprinkle of cinnamon sugar

Vanilla ice cream or whipped cream for serving

Directions:

Preheat and prep:
Preheat your oven to 375°F (190°C). Place the melted butter in a 9x13-inch baking dish (or similar size) and swirl it around to coat the bottom evenly.

Make the peach filling:
In a large bowl, combine the sliced peaches with both sugars, lemon juice, vanilla, cinnamon, and cornstarch (if using). Toss gently to coat, then set aside to let the juices start to release.

Mix the batter:
In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add milk and vanilla extract, then stir just until smooth—don’t overmix.

Assemble the cobbler:
Pour the batter evenly over the melted butter in the baking dish—do not stir. Spoon the peaches and their juices over the batter, spreading them out gently. Again, don’t stir! The batter will rise up around the peaches as it bakes.

Bake until golden:
Bake for 40–45 minutes, or until the top is golden brown and bubbling around the edges. If desired, sprinkle a little cinnamon sugar on top during the last 10 minutes of baking for a sweet crunch.

Cool slightly and serve:
Let the cobbler cool for 10–15 minutes to set up a bit. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Pure comfort in every spoonful!

Nutritional Information:
⏰ Prep Time: 15 minutes | 🔥 Cooking Time: 45 minutes | ⏳ Total Time: 1 hour

Hey there, food lover! 🌶️🍗 Ready for a flavor-packed journey to the Caribbean? This one-pot Jamaican-style curry chicken is bold, comforting, and bursting with island spice—perfect for a cozy dinner night!

🍛🔥 One-Pot Wonder: Jamaican-Style Curry Chicken 🔥🍛

Ingredients:

For the chicken:

2 lbs bone-in, skinless chicken thighs (or boneless if you prefer)

1 tbsp Jamaican curry powder (plus more for marinating)

1 tsp all-purpose seasoning or chicken seasoning

1/2 tsp salt

1/2 tsp black pepper

2 cloves garlic, minced

1 small onion, finely chopped

2 sprigs thyme (or 1 tsp dried thyme)

2 scallions, chopped

1 Scotch bonnet pepper, whole or sliced (optional for heat)

Juice of 1/2 lime or lemon (for cleaning the chicken)

For cooking:

2 tbsp vegetable oil

1 tbsp Jamaican curry powder (for “burning” the curry)

1 medium potato, peeled and diced

1/2 cup carrots, chopped (optional)

1 1/2 to 2 cups water or chicken broth (as needed)

Directions:

Clean and season the chicken:
Rinse the chicken with lime or lemon juice and pat dry. In a large bowl, season with salt, pepper, 1 tbsp curry powder, all-purpose seasoning, garlic, onion, thyme, scallions, and Scotch bonnet (if using). Let marinate for at least 1 hour, or overnight for best flavor.

“Burn” the curry:
In a large pot or Dutch oven, heat the oil over medium heat. Add 1 tbsp curry powder to the hot oil and stir constantly for about 30 seconds to “burn” the curry—this deepens the flavor and gives it that authentic Jamaican taste.

Brown the chicken:
Add the marinated chicken to the pot and sear on all sides until lightly browned—about 5–7 minutes. This helps lock in flavor.

Add veggies and simmer:
Add the potatoes and carrots, then pour in enough water or broth to just cover the chicken. Bring to a boil, then reduce to a simmer.

Cook until tender:
Cover and simmer on low heat for 30–40 minutes, or until the chicken is tender and the sauce has thickened to a rich, curry gravy. Stir occasionally and add a splash more water if needed.

Taste and adjust:
Remove the Scotch bonnet if used whole. Taste and adjust salt and seasonings as needed.

Serve it up:
Serve hot with steamed white rice, rice and peas, or roti. Don’t forget to spoon that luscious curry sauce over everything!

Nutritional Information:
⏰ Prep Time: 15 minutes (plus marinating time) | 🔥 Cooking Time: 40 minutes | ⏳ Total Time: 55 minutes
⚡ Calories per serving: Approx. 370 | 🍽️ Serves: 4–6
