🍛🔥 One-Pot Wonder: Jamaican-Style Curry Chicken 🔥🍛
Ingredients:
For the chicken:
2 lbs bone-in, skinless chicken thighs (or boneless if you prefer)
1 tbsp Jamaican curry powder (plus more for marinating)
1 tsp all-purpose seasoning or chicken seasoning
1/2 tsp salt
1/2 tsp black pepper
2 cloves garlic, minced
1 small onion, finely chopped
2 sprigs thyme (or 1 tsp dried thyme)
2 scallions, chopped
1 Scotch bonnet pepper, whole or sliced (optional for heat)
Juice of 1/2 lime or lemon (for cleaning the chicken)
For cooking:
2 tbsp vegetable oil
1 tbsp Jamaican curry powder (for “burning” the curry)
1 medium potato, peeled and diced
1/2 cup carrots, chopped (optional)
1 1/2 to 2 cups water or chicken broth (as needed)
Directions:
Clean and season the chicken:
Rinse the chicken with lime or lemon juice and pat dry. In a large bowl, season with salt, pepper, 1 tbsp curry powder, all-purpose seasoning, garlic, onion, thyme, scallions, and Scotch bonnet (if using). Let marinate for at least 1 hour, or overnight for best flavor.
“Burn” the curry:
In a large pot or Dutch oven, heat the oil over medium heat. Add 1 tbsp curry powder to the hot oil and stir constantly for about 30 seconds to “burn” the curry—this deepens the flavor and gives it that authentic Jamaican taste.
Brown the chicken:
Add the marinated chicken to the pot and sear on all sides until lightly browned—about 5–7 minutes. This helps lock in flavor.
Add veggies and simmer:
Add the potatoes and carrots, then pour in enough water or broth to just cover the chicken. Bring to a boil, then reduce to a simmer.
Cook until tender:
Cover and simmer on low heat for 30–40 minutes, or until the chicken is tender and the sauce has thickened to a rich, curry gravy. Stir occasionally and add a splash more water if needed.
Taste and adjust:
Remove the Scotch bonnet if used whole. Taste and adjust salt and seasonings as needed.
Serve it up:
Serve hot with steamed white rice, rice and peas, or roti. Don’t forget to spoon that luscious curry sauce over everything!
