How to make Alfredo TBC style!

Part 1
6tbsp of w**d butter
6tbsp flour

Part 2
1 cup chicken broth
3/4 cup heavy cream
3/4 cup whole milk
1/8 tsp white pepper
1/8 tsp nutmeg
4-5 cloves minced garlic

Part 3
1/2 lb fresh grated parmesan
1/2 lb fresh grated pecorino romano

Whisk together part one in the bottoms of a medium sauce pan till forms a thick paste add more flour if needed. Cook paste for 4-5 minutes over medium heat till it smells slightly nutty. Slowly whisk in part 2 make sure to whisk out all lumps. Bring the mixture to boil reduce to a simmer and whisk in part 3 again making sure to whisk out all the lumps. Simmer for about 5 minutes remove from heat and serve immediately over pasta! Sauce will thicken as it sits, add chicken broth to thin out if desired!
