After almost five months, I finally have my mill and I'm back to baking! Not quite at the selling point yet, though I will be both selling and doing demonstrations at Lake Metroparks July 11 at the Farm Days event.

Today I'm refreshing my skills at making dough by hand. This is the start to four Kamut loaves (it tastes like buttered bread - yum!!!). It's kind of like einkorn in that it doesn't develop much gluten and needs to be handled more gentle than regular wheat. These are 100% Kamut, so they wil not have an open crumb structure like our modern wheats. It's also supposed to be more thirsty, which I just found out. So I might be adding more water after my 30 minute fementolyse.

I've been absent for some time now. Major life changes going on, but I've been working on getting my Wondermill Junior Deluxe motorized. That was actually the easy part. My first few trials the flour and the mill were getting way too hot (over 130F). So I dusted off the 3d print and got to work doing some modifications.

There were two problems to address. The first was the overheating. The mill is either going to fast or staying too full because I like really fine flour when I bake. After checking to make sure the rpms of my motor matched the one sold for the mill (which it did), I decided I needed to change the feed rate. So I designed and printed a funnel of sorts to slow the feed down.

The second problem was flour going all over the place. Unlike the allowed speed of hand cranking the mill, the motorized mill turns much faster, and as such throws the ground flour in all directions. So I designed and printed a new shroud for the mill to keep the floor going in the direction I want - down.

Happy to say both solutions work very well in this test run! There are a few minor changes I need to make in both designs, but I now know the concept works. I pretty certain this slows my milking time down greatly, but that's a test for another day
