Needed a quick lunch.
Spaghetti squash and chick peas for the win. 15 minutes and 10 of that was microwaving the squash.

What we do with leftover Chinese delivery white rice in the Pampered Chef wok. I ordered a mixed grill over the weekend because I was craving a variety of proteins but I am also burnt out on kitchen-ing. With white rice because I am a cheapatoni.
Also because I make bomb fried rice with the leftovers and stuff I had in the freezer 💁🏻‍♀️💁🏻‍♀️
This was lunch today.

Tonight’s Clean-Out-the-Frigidaire plant-based supper: Cucumber Gazpacho and a fresh Corn and Avocado Salad with Lime Cumin Vinaigrette. Things I wiped out: over the hill parsley, basil (it was legit
black but still tasted fine - and the end result was still a brilliant green color), practically-soft seedless cucumbers, weeks-old grape tomatoes (picked the fuzzy ones out) some yellowing-brownish limes and half a forgotten red onion in a ziplock in the way back behind the beer stash.
The end of a jar of tahini and the can of chickpeas always in the pantry.
