Maybe you remember taking a big bite out of a juicy tomato as a child on a summer day, juice running down your chin!

What's your favorite tomato and way to enjoy tomatoes as an adult (my favorite tomato is heirloom)?

Tomatoes are high in beta carotene, lycopene, folate, phosphorus and potassium. Some people do have sensitivies to a lot of fructose, lectins, and being a member of the nightshade family they can be high in histamines.

That being said, tomatoes can also inhibit angiogenesis, and their skin is packed with 3 to 5 times more lycopene than their flesh. Heat even converts to greater amounts of lycopene, and enjoying with a fat such as a good olive and maybe some basil, creates a more absorbable form of lycopene by about three times. One Harvard study even showed how men who ate tomatoes decreased their risk of prostate cancer by 30 percent.

A study out of North Carolina found if a person eats 2 cups of Broccoli Sprouts there is an amplification of one's t cells and natural killer cells to fight the flu and other viruses by up to 22 times! The cell walls of the sprouts must be broken down though to unlock those powerful nutrients, so putting in a smoothie would be great. Why not find a way to add micro greens to your food today, even if it's just an elegant way to add a finishing touch to a dish?!

Pre-COVID 19 we were booked two months out, but each of those events was canceled mid-March understandably due to the pandemic.
Adversity creates new opportunities, different ways for one to express themselves.
One change we experienced through the pandemic, as with most, is the nuanced flavor of smoke. It's incredible how so many items have an extra layer of deliciousness with a subtle cold smoke, like Swordfish, or like these Pork Ribs, hot smoked to 203 degrees with a Hoisin Glaze.
How has the pandemic affected you? How have you found you will come out through the other side forever changed?
