A crispy blackened crust, creamy Cajun sauce, and fresh mango salsa on top. Save this one for later.
Ingredients:
For the halibut:
• 2 OceanBox halibut fillets
• 1–2 tbsp oil
• 1 tbsp butter
Blackening seasoning:
• 1 tsp paprika
• ½ tsp smoked paprika
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp dried thyme
• ½ tsp dried oregano
• ¼–½ tsp cayenne
• Salt + pepper
Mango salsa:
• 1 ripe mango, diced
• 2 tbsp red onion, finely diced
• 1 tbsp cilantro, chopped
• Juice of ½ lime
• Pinch of salt
Cajun cream sauce:
• 1 tbsp butter
• 2 cloves garlic, minced
• ½ cup heavy cream
• ¼ cup white wine or chicken broth
• 1–2 tsp Cajun seasoning
• ½ tsp paprika
• Squeeze of lemon
Directions:
1. Mix together the mango salsa ingredients and set aside.
2. Pat the halibut dry and coat evenly with the blackening seasoning.
3. Heat oil in a skillet over medium-high heat. Sear the halibut for 3–4 minutes without moving it. Flip, add butter, baste, and cook another 2–3 minutes.
4. In the same pan, melt butter and cook garlic for 30 seconds. Add the wine and cream, then stir in Cajun seasoning and paprika. Simmer until slightly thickened.
5. Spoon the sauce onto a plate, add the halibut, and top with the mango salsa.
