& like always, I’m proud of the work I do at the plankhouse inside so here’s all the yummy stuff I made this week!

1. DISTILLER’S CHARCUTERIE BOARD | 28
Chef’s selection of cured meats, pickled vegetables, house-smoked nuts, apple mostarda, crostin
2. Gin, Beet & Burrata Salad- Gin-infused roasted beets, arugula, burrata, grapefruit, toasted pistachios, fresh mint, orange gin vinaigrette, cracked black pepper, Jacobsen sea salt, Séka Hills olive.
3. COASTAL PRAWN SALAD- Romaine, organic greens, grilled prawns, marinated mozzarella, candied heirloom tomatoes, pickled cucumbers, shaved celery, tomato vinaigrette, horseradish croutons.
4. CLASSIC CAESAR - Romaine spears, garlic-Parmesan crouton, shaved Parmigiano, classic Caesar dressing
5. PACIFIC OYSTERS - Citrus mignonette, Tabasco pearls.
6. GRILLED & CHILLED PRAWN COCKTAIl- Mama Lil’s Peppers & horseradish coulis, lemon.
7. CRAB & SHRIMP LOUIE - Dungeness crab, Oregon bay shrimp, organic greens, hard-boiled egg, avocado, heirloom tomatoes, creamy Louie dressing

“Do what you love & you’ll never work a day in your life” is a saying I heard one of my old head chefs say to me early on in my career & its truly stuck with me. I LOVE cooking. I LOVE being on a hotline, salad station, prep table & being with other cooks and chefs that also love what they do & when it comes to being inside a kitchen. I have found love, chaos, calmness, joy, purpose & fulfillment working in restaurants.

I got to make a charcuterie board & cheese board for Chef Ben, the head chef for banquets on Thursday & it was such a joy to have creative freedom on both of them with the help of Kloey as well. I’m incredibly PROUD of these two boards & im forever grateful I got to work along side both Chef Ben & Kloey

Keeping quiet about what’s been going on with work has been hard but since the grand opening was Saturday, I can finally share what I’ve been working on at The Plank House inside Ko-Kwel Casino.

I mainly work as salad and cold side cook. I get to make cheese boards, charcuterie boards, salads and small bites & I’ve found my passion for plating, creating a beautiful work of art out of the food on my station. I work for an amazing chef & crew that TRULY care for what we do & what we have on our menu.

So, if you haven’t gotten the chance to The Plank House is NOW open for lunch & dinner Monday - Sunday from 11am to 11pm 🙂

My favorite day has finally arrived, pasta day!
in my culinary arts for baking and pastry with chef Chris! We were shown how to make fettuccine & ravioli!

1st photo- fettuccine with a pesto alfredo
2nd photo fettuccine with a tomato basil alfredo
3rd photo- ricotta filled ravioli with a mushroom, shallot parmesan cream sauce

Tomorrow, were bake in the bakery and I cant wait to show you what were going to be making!

Black forest cake with a cherry cinnamon filling & whipped cream frosting. It’s so yummy and would pair so well with freshly brewed espresso!

For me, nothing beats having the ability to make homemade loaves of sandwich bread. Having one semester of baking and pastry really helped me find my love for fresh, home baked bread. and also making homemade butter!

I made this loaf last night for the family and it turned out SO GOOD!. Im very proud of it!

Made yet another gluten free carrot cake with homemade cream cheese frosting & homemade sea salt caramel with a medley of almond, peanuts & walnuts finally chopped !

Super proud of my piping & how delicious the frosting turned out 😋
