A few weeks ago, our chefs gathered at Baldor Specialty Foods in the Bronx, one of the nation’s premier specialty food distributors. After touring the facility, they moved into a workshop on whole fish butchery, exploring how to thoughtfully, and deliciously, utilize every part of the fish.

Thanks to Baldor Specialty Foods and Tock for hosting us and bringing our chefs together.
