We've been feeling inspired by the colors of spring and looking forward to lighter, brighter meals.

Behind the scenes, we've been working on our summer menu and I can give you a sneak peak and share that we've created a new plant-based cheese, our version of a Boursin and might we say, it is absolutely delicious!

We've served it with crackers, as a dip for vegetables, as a base for roasted vegetables, and as part of a sauce.

Honestly, we can't get enough of it!

My current go-to afternoon snack: peanut butter stuffed Medjool dates.

PB2 + all-natural peanut butter + a little water, mixed and stuffed into pitted dates. Two of them is a serving. Protein, fiber, natural sweetness — and genuinely enough to carry you through to dinner.

I make a batch on Sunday and keep them in the fridge all week.
