Meet Carter, the talented lead cook behind tomorrow's Wine Wednesday feature.
His special showcases shrimp and scallop ceviche marinated in fresh orange and lime juice with cucumber and shallots, served on a crisp corn tostada with cilantro, red cabbage and guacamole.
A highlight of the dish is the shallot prepared three ways: in the ceviche, in the guacamole and as crispy fried shallots. The guacamole draws inspiration from the traditional molcajete method, creating rich texture and depth of flavor.
