This brand new natural process coffee we just got is from a single farm in Sulawesi, is really unique, and seems pretty special. Natural process refers to the way in which the coffee seed or bean, is left fruit intact to ferment and dry on raised beds, protected from the rain, for weeks, or even a month before the fruit is separated and washed away mechanically. This process can impart some really dynamic, more fruit forward flavors, and is definitely fun to play with. We're still dialing it in, trying to accentuate what makes it special, but green, this coffee smells of vibrant banana and chocolate. It's uncanny and makes everything else smell like nothing in comparison! We'll have it on shelves as soon as we're stoked on it!
