POV: You almost judge a restaurant by one dish… but everything else is incredible. 👀🇵🇦

Salvaje Panama delivered on the vibes, service, cocktails (after my first attempt 😂), and those lobster dumplings? Order them. Then order more.

I went in expecting rich, fall-off-the-bone short ribs bursting with bold flavor, but what arrived was something much lighter and completely different from what I had in mind.

That contrast threw me off more than the dish itself.

Kanibal was one of those restaurants that exceeded every expectation. I almost skipped it because of mixed reviews, and I’m so glad I didn’t.

The best meal we had in Panama? We made it ourselves. 🇵🇦

This Afro-Panamanian cooking class with Chef Dave in Casco Viejo was one of my favorite cultural experiences of the entire trip.

Good food, good drinks, great energy, and flavors that told a story.

We made yuca fries, coconut rice and peas, sofrito, sauces, ginger pineapple juice, and pollo guisado… and yes, Chef Dave gives you the recipes, but don’t ask me for them. You have to take the class! 😂

He also made a portobello mushroom sauce for the ladies that were vegan/vegitarian.
