I’m feeling very humbled right now. When I came upon this history, I got the biggest smile on my face, which I think is permanently stuck. I honestly don't even know how I managed to come upon the specific history book that held his pictures. It felt like a door was just opened for me at the exact right time.

We are so incredibly grateful to be the owners of this space. Stripping it down to its bare bones for our concept revealed hidden treasures we never expected, like the original 1892 encaustic tile floor that was laid down the exact same year the building's second story was completed.

Looking at his face, I just feel an immense respect for the human being who built our cozy, historic alleyway building in 1882 and the sheer drive he had to create something lasting. By tracking our plat number all the way back to 1865 and cross-referencing Sanborn Fire Insurance maps with old newspaper articles from back then, the years of everything finally matched up perfectly.

John was born and raised in the absolute Southwest corner of Pennsylvania (Greene County) before making his way to Rensselaer to build his legacy. As a native of the absolute Northeast corner of Pennsylvania (Athens), I realized we bookend the entire state. Neither of us started in the middle. We both started at the very edges of the commonwealth and met right here in the center of our building. Standing here feels like a total full-circle moment.

People often ask what’s taking so long, and this is why.

We’re not just building a shop; we’re building a foundation. This bun is the result of countless trials…learning how the gluten wants to behave, perfecting the rise, and finding that perfect balance of sturdy yet soft. I’ll be honest, I spent a good while fighting this dough. 🙃 The gluten was so strong and beautifully tight it kept trying to snap back on me, but I knew that meant I was onto something special.

It’s not just a bun. It’s the home for the future menu of To The Maxx Sandwich Shop. Whether it’s a meat-filled hoagie roll or the slow-cooked, messy, delicious sandwiches we’ve got planned down the road, it all starts with bread made with care. We’re going at our own pace, but I promise, the wait will be worth it.

p.s. I had to put one to the test with a juicy burger for lunch. 😋

At To The Maxx, we believe a sandwich is only as good as the bread that holds it.

We are busy behind the scenes getting the historic space ready, but the kitchen testing never stops. Yesterday, we perfected our house-made burger buns. We’ve spent weeks developing a proprietary method to ensure our breads are soft, pillowy, and hold up to the juiciest premium ingredients without ever getting soggy.

See those tiny, delicate blisters on the surface of this dough? As a baker, seeing those first thing in the morning is like hitting the jackpot. 🤗

From the raw, high-quality dough…
To that perfect, golden-brown bake…
To the soft, pillowy crumb.

No store-bought, mass-produced bread here. When we open our doors, every single sandwich is getting the elite foundation it deserves.

I logged into our page today and had to just stop and blink for a second. We hit exactly 555 followers, while following 55, all right as I prepare to celebrate my upcoming 55th birthday. Some might call it a coincidence, but I call it a beautiful Godwink letting us know we are exactly where we are supposed to be.

My husband and I are incredibly humbled by the love and support this community is already showing us. Every single follow, comment, and share means the world to us as we pour our hearts into bringing To The Maxx to life inside the historic Makeever Building.

Thank you for rooting for us and cheering us on during this journey. We cannot wait to welcome you to our little corner soon! 🤎 💛

Waiting for 300 lbs of beauty to roll up! The new front door for the shop arrives today. Keeping an eye out for the big XPO truck—this is the one we've been waiting for. 🤗 The face of the shop (the door) is here, but the heart (the kitchen) is still in progress. One piece at a time. 🚪

When we first bought this building, it had already been renovated by the previous owner. She had put a lot of work into it, and we truly respect that.

But as we started working in the space, we kept having these little moments…

Near the front door, a small section of the floor caught my eye. I remember stopping everything and saying, “Wait, what is this?”

We carefully pulled back just enough to see, and underneath was the original encaustic tile from 1892.

Not long after, some of the plaster gave way and exposed the brick beneath. And again, we stopped. Because what we found was just too beautiful to cover back up.

From that point on, everything changed.

We made the decision to take it all the way back... to uncover what this building originally was and build around that. We were able to salvage a 10x10 section of that historic floor, and we’re preserving it as part of this space’s story.

This shop is being built with a lot of love… and a lot of intention. Not just to serve great food, but to honor the history that was already here.

Every hoagie roll and bun is made from scratch, with the kind of care and attention that comes from truly loving the craft. We want every sandwich to be something you remember... and something you come back for.

And, of course, with a little help from Maxx 🐾

We’re getting closer to opening To The Maxx Sandwich Shop and starting to think about bringing on a friendly face for our front counter team 😊
