Jimboy’s Tacos started out in 1954 as a food trailer in Lake Tahoe, CA when founder “Jimboy” Knudson debuted his signature Original Ground Beef Taco dusted with Parmesan cheese. Jimboy’s has grown to over 40 locations in California, Nevada and Texas, with a commitment to using fresh, premium ingredients, cooked in small batches to ensure freshness and great flavor.
