Costillas Horneadas.
Oven-baked ribs, the way they’ve been made in Mexican kitchens for generations—slow, patient, finished in salsa.
Baby back ribs braised until they give. Green tomatillo-cilantro rice underneath. A sofrito of onion, garlic, tomato, and pepper, reduced down with a little Tempranillo for depth. And on top, a hoja santa leaf fried crisp—the sacred leaf of Oaxaca, anise and pepper and a little bit of magic.
Tomatillo. Hoja santa. Ingredients that were here long before anyone called them anything.
On the dinner menu, Monday through Saturday. Ven a probarlo.
