Our Smoky Jalapeño Dip is a real crowd-pleaser! It’s on the specials menu this weekend, and is a take on Alaska’s beloved Kenai Dip. We folded shredded Sharp Cheddar with pickled jalapeños, their brine, some mayo, smoked paprika, and a few other spices, and once all the flavors come together it’s served cold with crackers fresh veggies. If you’re looking for a fun twist on poke, check out this appetizer special we’re offering this week! Our Yellowfin Tuna Poke features cubes of raw tuna blended with cilantro and dill, as well as spring onions and radishes from . We’re plating it over a fun dill pickle hot sauce we made, before giving it a drizzle of cucumber crema and finishing it with some wonton chips. Come in for dinner this week and try our Pork Laab Rice Noodle Salad special! Laab is a favorite Thai dish of ours, a blend of minced meat (in this case, pork), herbs, lime juice, fish sauce & chilies that is often served with lettuce wraps or rice. We decided to stray from the path just a little, charring some green beans first to mix with the pork, then plating that over chilled rice noodles, romaine, cherry tomatoes & yellow bell peppers. It’s tossed with an intensely flavorful dressing that brings all the tangy, spicy & umami flavors into the fold, then we finish it with a flourish of herbs. One of our entree specials this week is Mussels Piccata! Every time we run Chicken Piccata it’s a huge hit, and we know our guests also love mussels, so it seemed only natural to bring the two ideas together! Delicate capellini pasta is tossed with white wine, lemon, shallots & garlic, then we fold in the mussels and finish it off with plump salt-cured capers and a compound butter we made with red sorrel from . This week’s hummus leans hard into some of the wonderful spring offerings from our local farms! We brought together green garlic, red sorrel & chives to make a hummus that has beautifully subtle garlic and onion undertones, balanced with a unique grassy, lemony pop. Finished simply with a bit of olive oil, we think it’s a delicious way to showcase some of what can be found right now at Vermont farms as we’re still gradually getting closer to full-on Farmer’s Market season!
