Elijah Haahr asked how we roast. Short answer: twenty pounds at a time, by ear, by nose with science and logging equipment for repeatability.

Green coffee goes in at room temperature. Between eight and eleven minutes it cracks, and the next ninety seconds decide whether the bag is good or forgettable. No gauge makes that call. A person standing at the drum does.

I learned that running steam plants and gas turbines before I ever touched a roaster. Heat, time, airflow, sound, smell. Same problem, different box.

Twenty pounds of green coffee. Somewhere between eight and eleven minutes, first crack. The next ninety seconds decide whether you reorder this bag or forget it.

Our founder learned that in an engine room before he ever learned it on a roaster. Navy steam plants. Gas turbines. Offshore rigs. Fifty-nine countries, and in every port, a local coffee shop, because that was where the wifi was and where the coffee was fresh. Two decades of ports taught him what coffee tastes like the week it was roasted. Two decades of engineering taught him how to make that happen on purpose, batch after batch, on a Tuesday in August in a shop with no air conditioning.

Heat, density, moisture, time, airflow, sound, smell. That is roasting. The same engineering fundamentals. That is also running a ship.

We roast every bag ourselves, twenty pounds at a time, in Springfield, Missouri. Nobody else touches it.

Forged through adversity. Driven by purpose. Service to those who serve.
